The Hunter class, and especially their pets, and seeing some huge mechanic changes in Wrath of the Lich King. Below is an overview of these changes, including interface upgrades and the brand new Pet system. See the other tabs for more detailed information.
Here is a few of the major class mechanic changes that will help boost Hunter survivability and group utility.

There are now two more slots available in the Stables! The first new slot costs 50g, the second costs 150g.
Here is a quick summary of some of the major points of the new system. More detailed changes can be found on the Pet and Pet Talents tabs:
A variety of new Pets have been added, including the new Moth and Wasp pet families! A variety of new Pets from the current families are available in Northrend as well, including new Wolves, Birds, Bears, and Warp Stalkers.
Exotic pets are a new form of pet available only to Hunters who take the 51-Point Talent in the Beast Mastery tree: Beast Mastery. These pets have special and unique abilities unavailable to the regular pet families.
The current Exotic Pet families are Devilsaurs, Chimeras, Silithids, Worms, Rhinos, Core Hounds, and Spirit Beasts. Each has a special ability for its family.

Ghostcrawler has confirmed that Hunters will be gaining additional stable capacity and integration with the new vanity pets/mount UI will be considered after testing of the new UI.
As of Live Beta Build 8634, several new pets are available for taming, including one new pet family and a variety of additions to existing families.
The new pet family added is Moths, a variety of which are already in-game. One example is the Royal Blue Flutterer found on Bloodmyst Isle.
There have also been a number of assitions to existing pet classes, such as new forms of Wolves, Carrion Birds, and Birds of Prey.

In Build 8681, Devilsaurs and Chimera have been added as Exotic Pets. In Build 8778, Silithids and Worms became available as tamable Exotic Pets. In Build 8820, Rhino's became available as an Exotic Pet family, but their own pet family ability has not yet been implemented.

The developers are currently working on the exotic pet talent. Exotic pets are exactly that, exotic and not the average run of the mill pet. But whether this name will stick or not, is uncertain at this point. But these will be a range of new pets with unique abilities, that only those with the talent will be able to tame and train. Where do you get them, well, we've not got news on that right now -- perhaps somewhere, exotic! ;-)
These pets are different from normal pets, but they're not necessarily more "uber" than others. However they will have access to unique abilities not available to the normal pets that every Hunter can train. A Hunter with this talent will get extra power, but from the talent's associated additional pet talent points and not necessarily from the exotic pet.
Beta Build 8634 unveiled a full-scale revamp of the Hunter Pet system. Here is an outline of some of the major changes.

All Pets will have one base damage ability with no cooldown (Focus Dump Ability). Bite has been altered and Smack has been added to behave exactly like Claw Currently does on Live. Your Family Just determines what the name and Icon of the ability will be.

Pets will be getting their own Talent trees that will replace the old skill Point system. Pets get their first talent point at level 20, and earn 1 talent point every 4 levels after that. Pet families will be divided into 3 categories (Tank, DPS, Utility) which will determine what talent tree your pet has access to.

Hunters are the survival experts of Azeroth. Using their knowledge of animals, as well as their own talents with guns and bows, a Hunter is able to stalk the world in search of his prey. Hunters themselves are skilled in the ways of the chase and use various abilities to give themselves an animal-like edge over their prey.
No-body knows when the first Hunters appeared, seeing as man and beast have always seemed to have some sort of connection since the beginning of recorded time. Hunters rely on the use of nature, much as Druids and Shaman do; but rather than summon natures forces to do their bidding, Hunters use the aspects of different animals to help them.
Aspects that Hunters can all on are numerous. They are able to call upon the Monkey, which gives the Hunter in question the ability to dodge easier than usual. They are also able to use the Hawk, which increases their sight so that the Hunter can hit his target easier. The Hunter can also call upon the Aspect of the Cheetah, which allows them to run like the cat from which they draw their power.
Hunters have also are the beings who keep the balance of the world. They are the ones who understand that taking life is just as important as seeing to it that life is given. Hunters also make life-long commitments and pacts with various animals. Once a pact is made, the Hunter will travel with his companion until the end of their lives.
Hunter’s choose a way of life that is difficult for many. They choose to hunt the world’s animals and keep the balance of nature rather than studying books of magic or wielding shields and swords to defend the kingdoms of the world.
With the addition of Northrend, Hunters must now call upon all the powers they have ever learned. The land itself comes to fight against the mortal heroes, and Hunter is eagerly waiting to answer its call….
